This machine will extract the oil directly from the fryer but is more suited to allowing the fryer to be drained (through a suitable sieve if you have large amounts of heavy debris) directly into the tank.

The machine can often be modified to suit the fryer. As long as the maximum capacity of the fryer does not exceed the capacity remaining at any reduced height of the tank (see cut-out to accept drain tube in picture on home page)

Note - If using Solid fat or oils (shortening) pre heat the filter unit.
Turn off the fryer heat source before starting this operation.
Position the Merlin Clarifry underneath the drain valve.
Drain the hot oil, if necessary through a sieve to remove major particles, into the Clarifry
You can also, using the nozzle - extract the oil/fat from the fryer into the machine.
Clean the fryers, removing all carbon build up from the metal surfaces.
Return the oil/fat to the fryer
During this return cycle the oil/fat is pulled through a low cost, fine grade, replaceable, viscous rayon filter sheet.
leaving the debris and the fines on that sheet.
"Top up" the oil/fat with fresh to replace that used during the frying session.
Use the "Superpad" (cycle as shown in the film of the Merlin 560) for really improved filtration
"Superpad" is a depth filter which retains debris through it's structure and not just on the surface.
For these improved results this "Superpad" operation is best done at 135º – 150º C (275º – 300º F)

This debris can be removed from your fryer using a standard "thin" filter sheet. The regular removal of debris will enhance the quality of your fried product and can extend the life of the cooking medium. This in turn should save you money. Clean the oil/fat then "Top Up" with fresh. |

Once the major debris (shown above) has been removed you can use the Superpad to give improved results by removing the finer particles which, if left, can continue to spoil the oil. The Merlin is ideal for this extra hot oil/fat cleaning process. It is suggested that the Superpad is used every 3-4 days to help maintain the quality of your cooking medium. This should give a visible improvement in your fried product. We now have a low cost adaptor that allows both the standard "thin" filter and "Superpad" to be used at the same time |
